Homemade Noodles!

So I've decided to branch out a bit more, and include some recipes on my blog. What's thriftier than cooking a good, homemade meal from scratch? Not much! Tonight I made homemade chicken noodle soup (recipe to come), and I used The Pioneer Woman's recipe for the noodles.(PS: Have you been to her site? It's fantastic! Try the Alfredo sauce recipe.. It's amazing!).

I thought at first that making noodles would be very difficult, but it's not, although it can be time consuming. I've used this recipe successfully many times. You only need flour and eggs! How simple is that!



The formula is 2 eggs/1 cup of flour. Pioneer woman estimates each egg= 1 serving. Since I was making a HUUUUGE pot of soup(for leftovers!), I used 6 eggs, and 3 cups of flour.



First measure your flour into a bowl, then crack the eggs in gently. A smarter person would crack the eggs in a bowl first, then pour them into the flour, to keep from possibly getting egg shells in the dough, but I like to live dangerously.




Then just dive right in! I mix in the bowl just until the eggs aren't liquid anymore, if that makes sense. Then turn the dough out onto a well floured surface. I use extra flour, because that is what will thicken up my soup when I add the pasta. If you were using the noodles for something else, like spaghetti, you only need enough flour to keep the dough from sticking. If it feels too sticky, flour your hands/the surface more.

Basically just pull and push and take out your aggressions of the day on the dough, until it's smooth and not quite as sticky. You want the dough to be a uniform color, no yellow "yolk" spots.

Then generously flour your rolling pin, and roll it out very thin. The noodles puff up like you wouldn't believe, so generally I just aim for as thin as I can get it without the dough tearing.




Then cut into whatever shape you want, with a knife, pizza cutter, whatever you have. I actually have a pasta maker that cuts noodles for you, but I have yet to figure it out! My mom bought it for me second hand and the booklet was missing. BUT, I don't really care if I have crooked noodles as long as they taste good!


These guys cook super fast.  Make sure the water/broth/whatever is at a good running boil, then just dump them in and stir gently. They only take a few minutes.


There is nothing, NOTHING like fresh noodles. I know people who have dried them, or frozen them, but I have not tried it yet myself. If you are a noodle enthusiast like myself, you will love these. Let me know if you try them!
