Turkey Taco Mac & Cheese!



This is a great, easy weeknight meal that I like to make on nights I don't feel like spending a lot of time in the kitchen, and just want something fast and easy! I won't claim that it's super low in calories, however I do use lean ground turkey, you could use ground beef if you prefer.


First I start off browning my turkey with a can of green chilies and taco seasonings. Boil your pasta water in the meantime.




I really like this brand of seasoning from Sam's Club.




Just cook your mac and cheese as directed on the box. You can really use any brand you want, I've tried publix brand, velveeta, and even homemade(which adds some time); but this is still my favorite boxed brand.


Once everything's done, just throw it all together and mix, and then you're done! Quick, easy, and very tasty! If you're feeling fancy, you can garnish with chopped tomatoes, chopped olives, tortilla strips, or sour cream! I've tried all of those and they are great! I hope you enjoy!

1.25 pounds lean ground turkey or beef
2 boxes Annie's(Or your preferred brand) Macaroni and cheese
8 oz can of roasted green chilies
4 tablespoons taco seasoning
Brown turkey on stovetop with green chilies and taco seasonings, let simmer for 5 minutes. Prepare macaroni and cheese as directed on box. Mix together pasta, cheese, and turkey, then enjoy!
Serves 4-6
